Karashi Mentai-ko Fukuchi are the entire sac of Pollock / Cod Fish roe extracted from the fish directly. There are lightly salted to preserve the sac and also to remove the fishy smell and taste.
 
Many chefs from Japanese restaurants, especially Omakase style restaurants, would tend to use Karashi Mentai-ko Fukuchi as they would want to create their own Mentaiko sauce from scratch according to their own tastebuds.
